Sweet Dreams Are Made Of This

Sweet Dreams Are Made Of This is a decadent concoction of honey, fresh pressed farm apple cider, brown sugar, sweet orange peel, and cinnamon that was fermented with a sweet mead/wine yeast.  The style is known as a cyser, which is a mead and cider hybrid.

The nose is that of cider, with mostly apples and sugar aromas.  The flavor is the same upfront, but quickly changes to a wine-like finish (think grapes and lemons).  The alcohol is evident, as the ABV is 12.6%.

Roughly 4 gallons were produced with the plan to bottle in 750 ml.  Stay tuned.
